Eggplants


It is a vegetable native to India. The Arabs have introduced the plant in Europe. Here, it is commonly used now. The eggplant is cultivated in large areas of Apulia. It is an extremely tasty vegetable and the core of many appreciable dishes. It belongs to the same family as the potato and the tomato. The eggplants contain vitamins: B1, B2, C, PP. Minerals: potassium, phosphorus, calcium, sodium and iron. They are indicated in low-calorie diets, and one can use them as an appetizer or side dish for roast meats.
